मेरी माँ असम से है. उन्हें ‘बिगौती’ से खासा प्रेम है, एक व्यंजन जो नवजात बछड़े के जन्म के तुरंत बाद भैंस और गाय के अतिरिक्त दूध से बनाया जाता है. खाने में यह छेना के तरह है, एक प्रकार का पनीर जो भारतीय उपमहाद्वीप से आता है, जिसका उपयोग मशहूर बंगाली मिठाई रसगुल्ला बनाने में किया जाता है. बिगौती मीठी होती है, लेकिन माँ इसमें थोड़ी-सी अधिक शक्कर मिलाना पसंद करती हैं ताकि यह थोड़ी और मीठी हो जाए…

मेरी आमा असमबाट हुनुहुन्छ । उनी बिगौति खान खुब मन पराउनु हुन्छ । घरमा भर्खर ब्याएको गाई वा भैसीको दुधले यसलाई बनाइने गरिन्छ ।हेर्नमा छेना समान, एक किसीमको कटेज चीज र विशेष भारतीय उपमहाद्विपमा पाइने साथै यसले खास बंगाली मिठाई रोसोगोला पनि बनाइनछ । बिगौतीको स्वाद गुलियो हुन्छ तर मेरी आमाले अझै चिनी थपेर यसलाई चर्को पार्नु हुन्छ । मेरो सम्झनामा ती दिनहरु अझै ताजा छन् जब हजुरबालाई ब्याउने गाईको नजिक जान गाह्रो पर्थ्यो…
